Fresh Green Salad with Pomegranates and Mint
So simple it barely needs a recipe but so delicious it deserves it!
This tasty combination is great all year round but especially good in the fall and winter months when pomegranates are at their peak. Incorporating seasonal fruits into my salads is one of my favorite things to do and the pops of juicy red pomegranate seeds in this salad are so bright and delicious! Combined with the freshness of the mint, this salad is a winner!
You’ll need
Baby spinach
Bibb lettuce
Fresh mint
Fresh Pomegranate seeds
Yummy Honey Salad Dressing (recipe here)
Here’s How
In a large bowl place your desired amount of spinach and lettuce, I usually go 50/50. Tear the fresh mint leaves with your fingers into the bowl, I do about a tablespoon or so. You can adjust to your liking. Sprinkle your greens mix with a few tablespoons or more of fresh Pomegranate seeds, toss with my Yummy Honey Salad Dressing and you’re good to go!
Of course, please use this as a guideline. Nothing is more fun than to take a recipe and make it your own. Add arugula, kale, sliced green apple, the possibilities are endless. But trust when I say this is a perfect, simple to make, big in flavor salad that is a wonderful compliment to any table.
