Fast and Easy, Low Cost, Low Calorie Lunches
Let’s face it we live in a busy world. Who has time to prep a meal in the middle of the day? Not me!
Having these freezer staples on hand saves me from sabotaging myself with carbs carbs carbs!
For me, being prepared is number one! I keep my freezer full of these low cost, low calorie, healthy choice items so I am always ready for the unexpected. If I don’t have these readily available you will find me diving head first into my pantry for crackers, chips and anything else that goes Crunch!
I love that I can throw together a yummy, healthy lunch in minutes. I even serve them to girlfriends when they stop by. They are that good!

Ok, I just realized this looks like a Trader Joe’s infomercial! Don’t worry if a Trader Joe’s is not near you. There will be a version of all of these items in your local grocery store.
Veggie Burger on mixed greens. Put desired amount of prepared salad in a bowl. I like to peel a little carrot and mix in some chopped green onions. Toss with dressing of your choice (might I suggest my yummy Honey dressing) and top it off with your favorite veggie patty. I cook my veggie patty in a toaster oven.
Riced Cauliflower stir fry with fried egg on top or Veggie patty on top. Place desired amount of riced cauliflower in sauté pan with a little olive oil. Heat up until just starting to brown. Put in a small bowl and top it off with fried egg or veggie patty.
Meatless meatballs. Place desired amount on a microwave plate and cook according to directions. Place on top of a salad or just pop them in your mouth and enjoy!
