Fresh and Delicious Blackened Fish Tacos
Or as my boys call them, Best Ever Fish Tacos!
You can count on these tacos being served a few times a month at my house. Even when you're full... you’ll want just one more!

You’ll Need
- Serves 6 -
For the Rub Mix:
3 tablespoons smoked paprika
1 tablespoon onion powder
1 teaspoon kosher salt
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon ground black pepper
1 teaspoon dried ground thyme
1 teaspoon dried oregano
For the Fish:
6 tilapia fillets
2 tablespoons canola oil
1 lemon, juiced (this is one of my favorite kitchen gadgets)
Here’s How:
Place your fillets on a half sheet pan. In a small bowl combine all of the spices. Using your fingers press a heaping tablespoon of the rub mix onto each fillet so that both sides are liberally coated.
Leave the coated fillets to sit at room temperature for 15 minutes.
Grab your favorite cast iron skillet (and if you don’t have one now is the time to add it to your kitchen arsenal because it is a work horse!). Add the oil and heat it up over medium-high heat. Once you see the oil smoking it’s time to drop your fillets. Cook them 3 minutes per side.
Remember, don’t disturb them. Let them sit and do their thing.
Using a fish spatula, remove the cooked fillets to a serving platter and repeat until all your fish is cooked. Using two forks flake the fish, pour the lemon juice over the fish just before serving.
Heat up a tortilla add some blackened fish, red onion, cilantro and cojito cheese.
