Cinco De Mayo: Grilled Corn Salad & Skirt Steak Tacos with Chimmichurri
These festive Mexican dishes are guaranteed to make the whole family happy.

Grilled Corn Salad
This Grilled Corn Salad is so packed with flavor I highly recommend you double it!
You’ll Need:
6 ears fresh corn - grilled
½ cup mayonnaise
¼ cup Cotija cheese crumbled, plus more for garnish
2 limes, juiced and zested
¼ cup chopped fresh cilantro leaves
1 Tablespoon chili powder
Here’s How:
Heat grill to high. Grill corn until charred on all sides, about 10 minutes. Take off the grill and let it cool. Remove the kernels with a sharp knife.
Put a skillet on the stove over medium-high heat. Add the corn and the remaining ingredients to the hot pan and cook, stirring occasionally, until creamy and heated through.
Chimmichurri
My boys say this Chimichurri Sauce is the Best Ever! They love it so much they don’t just drizzle it on tacos, they eat it like salsa with chips!
You’ll Need:
1/2cup (packed) fresh cilantro leaves, divided
6 garlic cloves peeled crushed
2 jalapeño chilies, stemmed, halved
4 large bay leaves, center stem removed, leaves crumbled
1 tablespoon dried oregano
1 teaspoon kosher salt
1 cup (packed) fresh Italian parsley leaves
½ cup distilled white vinegar
½ cup olive oil
Here’s How:
Combine ¼ cup cilantro, garlic, jalapeños, bay leaves, oregano and salt in the processor. Blend until mixture is finely chopped, scraping down the sides of the bowl occasionally.
Add parsley, ¼ cup cilantro, oil, and vinegar. Blend until herbs are coarsely chopped. Season with pepper.
Cobi Quick Tip: You can save yourself some time and make this up to 8 hours ahead. Cover, and keep at room temperature.
Steak Tacos
These are super simple, all I do is season my skirt steak with salt and pepper. Grill it, slice it, and enjoy drizzled with Chimmichurri. And don’t forget to warm your tortillas!
