Holiday Recipes: Grammy's Pumpkin Cake

By far the Best Pumpkin Cake Ever!

This dish is ridiculously easy– it is from a box! All you need is a bowl and a spoon, but I am here to tell you that I mark up all my recipes cards and on this recipe it say it’s a “Crowd Pleaser”… and it really is!

I have a funny story about this cake. My mother once worked for days on a special log dessert for Thanksgiving. She and I were so excited and proud of it. At the last minute my Mom decided to throw this no-fuss Pumpkin Cake together too. Well, at the end of the evening with much fanfare she presented the beautiful upright log dessert she had made.

Well, much to our surprise, everyone could not stop talking about (and going back for seconds of) this beyond simple box Pumpkin Cake! Goes to show you one does not have to work themselves to the bone for a Spectacular Dessert! To make it even more festive don’t forget a dollop of Perfect Every Time Freshly Whipped Cream on top!

You’ll Need

1 box yellow cake mix (reserve 1 cup)

3/4 cup unsalted butter, softened (divided into 1/2 cup and 1/4 cup)

3 large eggs

30 oz can of pumpkin pie mix (already spiced)

⅔ cup evaporated milk (this is one 5 oz. can)

½ cup sugar 

1 teaspoon cinnamon

Here’s How

Ok, start by preheating your oven to 350 degrees. Grease a 9x13 baking pan and set aside. Now I’m going to break this down into clear steps:

Step 1:

In a medium bowl add the yellow cake mix (remembering to reserve 1 cup). In a microwave-safe measuring cup melt 1/2 cup butter in the microwave and pour it into the cake mix. Now in the same cup, crack one egg and lightly beat. Add to cake mixture and mix with a spatula until blended.

Spread mixture evenly into your greased 9x13 pan

Step 2: 

In a medium bowl crack 2 large eggs and lightly beat. Add the 30 oz pumpkin pie mix and evaporated milk. Gently mix together with a whisk.

Cobi Quick Tip: I wash the bowl I just used and use it again. 

Pour pumpkin mixture over the first layer and even out with a spatula.

Step 3:

In a small mixing bowl, add the reserved 1 cup of cake mix, sugar, softened butter and cinnamon.

With your hand mix together until crumbly. Sprinkle evenly over the pumpkin layer. 

Cobi Quick Tip: If you forgot to take the butter out earlier to soften, place it in the microwave at 10 sec increments until just soft to touch.

Now we’re ready to bake! Place in preheated 350 degree oven and bake 50-60 minutes. 

Once cooled and you’re ready to serve, slice and top off with homemade whip cream! Enjoy!
